More than an ecological approach, it’s a philosophy of life
If you want to anger Yann and Philippe, tell them that what they have is just a customer/supplier relationship. That’s a very dismissive way to categorise what it is that unites these two enthusiasts of beauty and goodness. At the Jardin de la Piboule, Yann works to create harmony and life. Every day, he reconnects the loose threads of our relationship with the earth, encouraging it to give the best it has. As he likes to express it, he just helps nature, and it is she who generously provides her bounty of vegetables and herbs. Philippe Colinet, of course, fully identifies with this vision of the world and the relationship between nature and produce.

The produce of the Jardin de la Piboule follows the seasons and the rhythm of the earth. Chef Colinet comes to Yann for the basis of his dishes but also for inspiration throughout the year. The beauty and serenity of the place contrast pleasantly with the bustle of the Colette kitchen team in high season. Winter is, on the contrary, the time for sharing ideas as well as dreams. Philippe Colinet has made significant progress during the 2023 season with the opening of the Chef's Table and the realisation of his concept dish based on lemon. There is no doubt that these moments shared with Yann from the Jardin de la Piboule will bring him new perspectives, so that he can amaze you once again when you return to the restaurant Colette in 2024!
