At Colette restaurant in Saint-Tropez, indulgence is a serious affair… but always served with lightness and bold creativity. This season, Michelin-starred chef Philippe Colinet, also a Maître Restaurateur and recognized by Gault&Millau, teams up with Yona, the new pastry chef, to craft desserts that reinvent the classics with freshness and flair.
Together, they create dishes that tell the story of a sunny, gourmet Provence, where every bite is full of surprises.
When Dessert Becomes a Playground
At Colette, dessert is a playground.
Chocolate from Maison Duplanteur in Grasse is transformed into various textures and paired with vibrant citrus for an unexpected zing.
Strawberries from the Plan greenhouse—one of their local producers—are combined with aromatic herbs like savory, carefully balanced to awaken the flavors without overpowering them.
Even more surprising, carrot is featured in a sweet version, showcasing its naturally mild and slightly spicy notes, while melon, reimagined in the style of a calisson, becomes a delicate tribute to Provence—blending childhood nostalgia with contemporary elegance.
The Perfect Balance Between Boldness and Finesse
Beyond flavor combinations, each plate is about achieving harmony: boldness that’s under control, sweetness without excess, pleasure crafted with precision.
At Colette, indulgence is uncompromising—a delightful sweet interlude to savor without hesitation.
An invitation to rediscover the simple joy of dessert.
The Colette restaurant is located within Hôtel Sezz Saint-Tropez.
