Two chefs, two restaurants, one shared name — and a mutual passion for produce and culinary creativity. This season, a unique collaboration comes to life between Philippe Colinet, chef of Colette in Saint-Tropez, and Thijs Vervloet, chef of Colette in Westerlo. A Michelin-starred encounter where taste, technique, and emotion come together in every dish.

A meeting of two culinary worlds

It all began on March 26, when Philippe Colinet traveled to Westerlo to cook alongside Thijs Vervloet in his Michelin-starred restaurant. The evening was marked by creativity, a deep respect for ingredients, and a clear synergy between two gastronomic visions. The success of this first collaboration sparked a desire to continue the journey.

June 8: A not-to-be-missed event in Saint-Tropez

For the second chapter of this gastronomic fusion, Thijs Vervloet will join Philippe Colinet at Colette in Saint-Tropez. On June 8, the two chefs will craft an exceptional four-hands dinner, imagined as a dialogue between their culinary roots — Provence and Belgium. The eight-course menu will showcase exceptional ingredients, bold creativity, and a shared love of taste, with each dish reflecting a story of passion and precision.

Dinner is priced at €250 per person, excluding beverages. A wine pairing is available for an additional €135.
