Last season ended with the best of all awards: getting a star in the famous Michelin Guide. While it emphasizes the mastery, know-how and originality of our chef Philippe Colinet, it is also a tribute to his team and, in particular, to his pastry chef Aurélien Wargny. Let us introduce it to you ...

 

A path of excellence

Head baker at the start of his career, Aurélien Wargny decided to embark on the pastry which had been tempting him for a long time. First step: a diploma from the Institut National de Boulangerie Pâtisserie. Then begins a flawless course in the greatest houses, like that of Pierre Gagnaire, in Courchevel, but also in the Bastide de Gordes and the Bastide de Saint-Tropez. It was there that he met Philippe Colinet that he decided to join last year to complete his team at the Colette restaurant at the Hotel Sezz. More than a professional bond, it is a real sharing and a communion of values that is established between the two leaders.

 

A menu in their image

Chef Colinet's cuisine has earned its reputation and its star by its rigor and precision. Attentive to each product, to the respect of the seasons, to the work of artisans, the chef designs refined and aesthetic dishes where Mediterranean flavors are sublimated. For the softness part of the menu, Aurélien Wargny is totally in this process. Through discussions with the chef, ideas shared in the kitchen, meetings with local producers, chef Wargny has imagined astonishing desserts, mixing unexpected flavors and textures to create sublime unions. If his sweets around Tomato and Fig are simply breathtaking, he likes to tell about the beautiful synergy that has linked him to the Chocolaterie de Grasse and has led to the creation of his Chocolate, a magnificent alliance of Guanaja 64%, thyme and Hazelnut.

Like chef Colinet, pastry chef Aurélien Wargny likes to start from a quality product, seasonal and regional, to decline its flavors and enhance it with original alliances. We are happy to have him back with us this season!
