It was a lovely surprise that the famous Gault & Millau guide had in store for the team of the Colette restaurant, and in particular its chef, at the end of summer 2021. That’s when we had the honour of receiving the Trophée de la Cuisine de la Mer for our seafood cuisine. It’s an award that salutes the work and inspiration of chef Colinet but also the savoir-faire of many local producers.
The Trophée de la Cuisine de la Mer
Each year, this gastronomic guide that is read and acclaimed around the world presents awards to recognise the work of chefs and restaurants. With the prestigious sponsorship of Arnaud Donckele, three-star chef from Saint-Tropez, and under the benevolent gaze of Marc Veyrat, on September 6th our chef Philippe Colinet received this latest accolade for his talent and culinary expertise. Prior to making their decision, the jury carefully assessed the quality and taste of the products, as well as the creativity and skill of the chef.
A refined cuisine inspired by the Mediterranean
Chef Colinet has always built his cuisine around the finest produce. Since his arrival in Saint-Tropez, he has met, befriended, and cooperated with artisans and producers who feed his inspiration and creativity. Regarding seafood, for example, he trusts oyster farmer Patrick Mendès in La Seyne-sur-Mer and the fishing crews of Menton and Cogolin. Thus, he can offer you his octopus with celery and candied lemon, his squid cooked in its own ink or his Mediterranean red tuna with Provencal raw vegetables and red pepper sorbet ...
After rewarding us with a Michelin star at its beginning, 2021 continues to be a defining year in the career of chef Colinet and the history of the restaurant Colette. With this Trophée de la Cuisine de la Mer awarded by Gault & Millau, once again the commitment of the restaurant Colette and its team to creativity and a refined and aesthetic cuisine are being honoured.
