In August in Saint-Tropez, the evening starts well before dinner.

Around 7 p.m., the heat falls gently. The light turns. The palm trees cast long shadows on the pool tiles. This is the moment when the Sezz changes pace, and one of the most beautiful evenings of summer can begin.

19h30—the Dom Pérignon bar at sunset

There are places that don’t need to be searched. When you stay at the Sezz or spend the evening at the hotel, the bar Dom Pérignon naturally imposes itself, by the pool of 200 m 2, under the illuminated palm trees as soon as the light goes down.

The atmosphere has nothing to do with the beach bars of Pampelonne. No loud music covers the conversations. No crowds that we go through to order. It’s a residence bar, quiet, attentive, in keeping with the hotel.

À la carte: the house’s signature cocktails, including Brise de Canopée, Perle Rose in a mocktail version, and the cuvées Dom Pérignon and Moët & Chandon à la coupe. Everything is served at the water’s edge, in the end-of-day light that makes this moment something hard to describe and easy to remember.

After dinner, it only takes a few steps. The bar is always there, the pool, the illuminated palm trees, the dim light, and the evening continues in peace. The best parties at Sezz often end where they started.

 

8:30 p.m. — a casual dinner at the Le C bistro

For those looking for an evening without ceremony but with a real cuisine, Le C is the ideal option.

The terrace of the C in the evening has something special. The heat of the day has dissipated, the garden lights are starting to turn on, and the pool is turning a different shade. It’s the time when you really enjoy yourself, without looking at the time.

The Bistrot de l'hôtel Sezz offers a generous Mediterranean menu signed by Chef and Master Restaurateur Philippe Colinet, in a freer style than the Colette, with no set menu or strict dress code. We sit on a shaded terrace facing the pool, order from our plates, take our time.

A few dishes that cross the summer: grilled octopus with chickpea purée, Charolais steak with garlic butter, Japanese aubergines cooked on the fire, traditional vanilla caramel cream. Dishes from €17 to €78, a cuisine that knows its territory.

The C is open for lunch and dinner, seven days a week, to both residents and outside visitors. Dogs are welcome up to 10 kg. Parking is free, with valet service. For an evening without constraint in Saint-Tropez, it’s the address that checks all the boxes.

 

8:30 p.m. — a gourmet dinner at the Colette restaurant

For those who are looking for something else that evening.

The Colette restaurant has been a Michelin-starred restaurant since 2021, and one of the few gourmet restaurants in the Gulf of Saint-Tropez open to both residents and external visitors, without the need to stay at the hotel.

The terrace of Le Colette overlooks the swimming pool and the century-old olive trees of Le Sezz. In August, the end-of-day light is special, this soft blue that can only be seen here, between the hills of the Var and the bay of Canebiers.

In the kitchen, Chef Philippe Colinet offers two menus for the 2026 season:

The Substances menu—5 acts around the pure, plant-based and marine product. Braised and smoked eggplant, gamberoni with head juice, red mullet in ink, apricot with chilli pepper and honey. The concentrated taste of the Mediterranean summer on every plate.

The Meaning menu—7 acts that call on the five senses. Squid risotto, beef with brocoletti and strong juice, 86% chocolate from Peru with hazelnut praline. More complex, longer, and more immersive.

Two restaurants, two ways to experience an evening at the Sezz. The choice depends mainly on the atmosphere and the desired experience.

Thursdays evening—musical evenings at the Colette

This is one of the most sought-after moments of summer at the Sezz, and one of the least known outside.

Every Thursday evening in August or every Monday in September and October, from 8pm to 10pm, the restaurant Colette offers an evening with live music, acoustic format, intimate, designed to accompany dinner without covering it.

The programming for summer 2026:

  • - Thursday 27 August: Groupe Kaaz, covers of the great hits from the 70s to today.
  • - Monday 7 September: Gabie & Niko, soul, pop, RnB in jazzy shades.
  • - Monday 14 September: Groupe M.A.G.E, soul and acoustic pop.
  • - Monday 21 September: Kaaz Group.

It’s not a club night. It’s elegant entertainment, in keeping with the Colette, music that creates an atmosphere without forcing it. The difference between a dinner with music and another night is felt, and customers who have experienced it once plan it for the following year.

Book early, these evenings are the most requested dinners of the season.

 

An evening where everyone is welcome

A detail that changes everything for some: dogs are accepted at Sezz up to 10 kg, at Colette, at the bistro Le C, in outdoor spaces. No need to leave your pet alone.

For the rest: parking is free, and so is the valet. The hotel is open to external guests for all its dining and bar addresses, no need to stay to spend the evening here.

In August, booking is strongly recommended.
