An essential element of the Sezz Saint-Tropez boutique hotel appeal is the elegant, yet inviting and soothing atmosphere of the Colette, our establishment’s restaurant. To complement our chef Philippe Colinet's refined and aesthetic cuisine, we have designed a resolutely modern, understated setting that is beautifully integrated into the interior and exterior spaces of the Hotel Sezz.
Under the Provence sun
Open from May to October, the Colette restaurant invites you to enjoy all the riches of the Mediterranean. These riches are found on the plate in the form of seafood and locally sourced and seasonal vegetables, olive oil or saffron and herbs, and all around due to the restaurant being open to the outside world. The large windows allow the dining area to be bathed in sunlight dappled by the delicate shade of palm and olive trees. This blend of Californian and Provençal aesthetics can also be seen in the alliance between the metal of the structures and furniture and the sandstone of the crockery produced by local artisans.
Major names at the Colette
The decor of the Colette restaurant has been entrusted, like that of the entire Sezz establishment, to the designer Christophe Pillet, who is known throughout the world for his pure and essential creations in which refinement and elegance are born from simplicity. For outdoor furniture, we naturally turned to the designs of the Italian company Varaschin, which perfectly complemented our vision. During your meal at the Colette, you will discover the comfort and aesthetics of the EMECO chairs specifically developed for the Sezz. The Colette restaurant is firmly rooted in today. However, even with its very contemporary lines, it does not reject its Provençal roots, but integrates them subtly to create an elegant, yet warm and friendly atmosphere. Come and discover it as soon as we reopen on May 6th, 2022!
