Rewarding encounters, fruitful relationships, exceptional produce

Awarded a star in the Michelin Guide in 2021, chef Philippe Colinet of the Restaurant Colette in Saint-Tropez is happy to reveal some of his secrets. A passionate advocate of aesthetic and refined cuisine, highlighting all the subtlety and richness of the ingredients, he is constantly in search of the best, which leads him to rewarding relationships with local producers.

 

The flavours of Provence

From November to March, the Hotel Sezz and its Restaurant Colette close their doors and take a winter break. Our chef Philippe Colinet takes advantage of this well-earned downtime to explore the region and meet those who keep local traditions alive and are full of passion for their profession. From market gardeners and fishermen to goatherds and beekeepers, our chef loves to talk with them about their methods and taste their produce. From these chats at a table or in the open air are born ideas for recipes and combinations of flavours which you’ll find gracing your plate the following spring.

 

Passionate personalities

Among the great encounters that gave birth to the menu for the past two seasons, let us dwell for a moment on the one that led chef Colinet to the Jardin de la Piboule in Cogolin. Yann Ménard welcomed him there and delighted in presenting his magnificent vegetables and his philosophy of life and work, all embodying a respect for the environment and consideration for future generations. Also in Cogolin, a meeting with the naturopath and herbal specialist Bodo Fath opened up new perspectives towards a more vegetal cuisine. Lastly, from the oysters of Patrick Mendès in La Seyne-sur-Mer to the catch of the day offered by the fishermen of Menton and Cogolin, the sea is an unrivalled source of inspiration.

From breakfast in your Hotel Sezz, where you can enjoy the delicacies of the Maison des Confitures in Gassin and honey from the Manufacture du Miel, through to your meals at the Colette, your gastronomic experiences will be a hymn to the passion and savoir-faire of local producers, all carefully chosen by our chef Philippe Colinet ...
