Two excellent pieces of news for April 2017. First, spring has arrived in a fanfare of spring flowers and young leaves. Secondly, Restaurant Colette opens its doors on April 21st for a new gastronomic season – the whole team is waiting to introduce a menu with a decidedly Mediterranean flavour.
A sunny theme
Peppers, tomatoes, green beans, basil and lemongrass meet this spring in a rendezvous of seasonal flavours and summery colours. At the Colette Restaurant, we use seasonal products to create a menu that combines the traditions of Provence with the culinary riches of Italy and Spain - with, perhaps, a touch of Japan in the seasoning. Therefore, black sesame enhances a wild prawn risotto and yuzu jelly is the perfect accomplice to Provencal honey with roasted pork. As for the fillet of salmon, it is eaten "hula hula" in the Hawaiian way with pineapple, ginger, peanuts and a wok filled with fresh vegetables!
Delight your taste buds
Because the enjoyment of our guests is paramount, the Colette team lights the stoves, kneads, peels, mixes, minces, braises, and stirs to combine the ingredients of its sauces or adjust the cooking time for meat. We use the best products on the market; beef from Salers, Normandy, Galicia and the USA, or Black Angus from Scotland. We choose French or Iberian pork, lamb from Sisteron, and poultry from the Ardèche or the Landes. Our salmon is organic and we select vegetables from the best producers. So, in the enchanting setting of our terrace, seated between palm trees and olive trees, you will taste grilled prawn skewers, lamb with Garrigue herbs, or cannelloni with delicate ewe’s milk cheese. And, as the sun sets, the lights are dimmed so that candles can be lit on the tables. It’s the perfect time to end your meal with apple tarte Tatin with Bourbon vanilla, the perfect blend of strawberry and Champagne, or the delicate bitterness Chocolate fondant before returning to the cosy and elegant intimacy of your room.
