We were all waiting for it and here, at last, it is; the new menu of the Colette restaurant has been unveiled by our chef Nicolas Gautier. A menu dressed in the colours of summer, the mere evocation of which awakens the taste buds.
Wonderful seasonal vegetables
What could be more appropriate as nature bursts into colourful new life all around us than a menu enlivened by the green of pesto, the red of tomatoes and the sunshine yellow of corn. With mini grilled vegetables, guacamole, petits pois with cumin, and honey-glazed roast baby carrots, the blending of vegetables and gourmet satisfaction achieves new levels of success at the Colette! In the kitchen, Nicolas and his team bring to life the embers that grill the vegetables, crush the fresh tomato, work the petits pois into the falafel, stuff the barbajuans, keep a watchful eye on the warming focaccia and add a hint of truffle to the mashed potatoes with love and care for a job well done.
Mezze and grill to share
... or not, as you wish. Our chef looks forward to seeing your reactions because this year he’s offering convivial mezze platters of tuna tataki, sea bream ceviche, Iberian ham, burrata.... that gourmands will probably prefer to keep all to themselves! He’s also whipping up magic with ember-grilled Aubrac fillet, Carnaroli risotto, and his special favourite, rib of Galician beef, just right for two people to share.
And what about dessert?
How to express in a few words the divine sensation of the apricot Bergeron delicately enhanced with lemon and thyme melting on the tongue accompanied by honey-almond ice cream, to describe the sensuality of the caramelised tarte tatin and its bewitching vanilla ice cream, the delicious contrast between the bitterness of yuzu délice and the sweetness of its fromage blanc mousse, the heady duo chocolat café... ? It’s easier for you to come and indulge in them, with all the risks of addiction that entails!
