Today, we close the doors of Restaurant Colette after a season defined by culinary creativity and a renewed commitment to excellence. With the renewal of our Michelin star, this year has been a true celebration of flavors, driven by the talent and passion of Chef Philippe Colinet and his team, always dedicated to offering unforgettable experiences to our guests.


Exceptional Menus: Originel and Substantiel

This season, our guests had the chance to discover the Originel and Substantiel menus. These culinary offerings reinvented simple products, with a special focus on vegetables and citrus, turning each dish into a celebration of nature and plant-based ingredients. The Originel menu, a true ode to vegetables, delighted with its freshness and creativity. Meanwhile, the Substantiel menu highlighted bold combinations of lemon and chocolate, illustrating the perfect balance of textures, flavors, and originality. Each bite was an invitation to a unique sensory journey.


Eco-Friendly Commitment: Partnership with Les Alchimistes

True to its eco-conscious approach, Restaurant Colette introduced a new partnership this season with Les Alchimistes, experts in sustainable waste management. Thanks to this innovative project, every kitchen waste was transformed into compost to fertilize local soils, demonstrating our strong commitment to the environment and sustainability. This approach reinforced our mission to offer responsible and respectful gastronomy, where every action truly matters.
