Final Curtain: A look back at a gourmet and inspiring season

Final Curtain: A look back at a gourmet and inspiring season

Each season at Restaurant Colette is a culinary adventure, shaped by encounters, creativity, and shared moments. As the curtain falls on 2025, it’s time to reflect on the highlights that made this year so remarkable.

Excellence reaffirmed

Even before reopening, Philippe Colinet was awarded the title of Maître Restaurateur, a distinction that honors both craftsmanship and a commitment to authentic, artisanal cuisine. Just a few months later, in May 2025, Restaurant Colette reopened its doors with another recognition: the renewal of its Michelin star. Two accolades that celebrate a culinary vision where local produce, seasonality, and emotion play a central role.

Inspired plates, a dedicated brigade

Throughout the season, Philippe Colinet and his team brought to life a cuisine that is both clear and demanding, where the essence lies in the truth of the product. Inspired by the Mediterranean, the chef created dishes that combine technical precision with emotion, showcasing the richness of local producers with whom he works hand in hand. Behind every plate stands the talent of a united team, driven by the same desire: to offer guests an experience that is precise, generous, and inspiring. This dedication also shone through during unique events, such as the four-hands dinner with Belgian chef Thijs Vervloet of Maison Colette, which opened a creative dialogue between two culinary sensibilities.

As the season comes to a close, we warmly thank our guests for their trust and their smiles, and our team for its passion and dedication. In May 2026, Restaurant Colette will reopen with the same promise: to offer you a gastronomy that is ever more inspired, generous, and profoundly human.
