On May 1st, 2025, Colette Restaurant opens a new season, staying true to its essence: product excellence, Provençal roots, and a committed culinary approach. This year, Chef Philippe Colinet unveils a menu refocused on the essentials: two signature tasting experiences, a deeper exploration of each ingredient in its entirety, and strengthened collaborations with local artisans.

 

A Product-Centered Cuisine in All Its Splendor

Enhancing the ingredient, working with it in its entirety, and revealing every nuance—that’s the philosophy guiding this season.


Two culinary journeys await:

  • A 7-course menu where Provence is fully expressed. Among the new creations is a dish inspired by one of the chef’s childhood memories: a harmony of Giol mussels and potatoes, echoing slow-cooked recipes from his youth, where flavors would gently caramelize at the bottom of the pot. Trout from the Haut-Var, shellfish, and citrus fruits also remain key elements of his culinary signature.
  • A 4-course menu following a storyline inspired by nature—plant, rock, and earth. Each dish explores a different facet of the Provençal terroir. Rockfish soup, braised veal chuck with red wine… It’s a deep dive into authenticity and heartfelt culinary expression.

 

A Passionate Team for a Unique Experience

This season also marks the arrival of Yona, the new pastry chef, who works in close harmony with the kitchen. Chocolate, citrus from the garden, kumquats, strawberries from the Serre du Plan, carrot and melon—reimagined in a nod to the iconic calisson—come together in a collection of desserts that are both balanced and inspired.

A new F&B manager, already well-versed in the chef’s culinary universe, has joined the team to guide guests through this flavorful journey.
